In the morning, the first light falls on the wooden floor. Outside, dew lies on the meadows, and the gentle lapping of water can be heard from the pond. Somewhere, one of our chickens is clucking. Inside the house, it smells of coffee and fresh bread.

No scrum at the buffet. No glancing at the clock. No table needed for the next guests. In a Holiday cottage with regional breakfast The day begins when you are ready for it.

Perhaps you're already sitting barefoot on the terrace. Perhaps you're still reading a few pages in bed. And perhaps the first coffee will turn into a long morning, because no one expects anything from you today.

At Ebner 1822, the breakfast basket is included with your stay. It is delivered directly to your holiday home in the morning and is already included in the price. When you open it, where you have breakfast, and how long you linger are entirely up to you.

In the basket, you'll find carefully selected local foods and – depending on the season and availability – fresh eggs from our chickens Mathilde, Herta, Henriette and Gertrude. What appears on the table isn't meant to impress with quantity. It's meant to taste good and fit this place.

Fresh bread, butter, cheese, yoghurt, fine spreads, juice, and something sweet for the morning: not an endless selection, but good food, carefully chosen.

Because sometimes it's the simple things that stay in your memory. The taste of a crisp bread crust. A still-warm egg. The first coffee with the window open. And the feeling of having nowhere to be.

What Carinthia serves up in the morning

A regional breakfast doesn't look the same in every season. In summer, berries and light flavours are welcome on the table. Later, plums, apples and ripe fruit are added. As the days get cooler, breakfast can also taste more robust.

Not every food needs to be available all year round. Its value lies precisely in that. What is in season tells us something about the landscape we are visiting.

However, regionality alone is not enough. What matters is how a food item was produced, how it tastes, and the people behind it. That's why we focus on quality, origin, and a responsible approach to nature when making our selections.

Breakfast for as long as you like

There are many things in a hotel that make a holiday pleasant. However, a holiday home offers a different kind of freedom: you live in your own four walls for a few days.

At Ebner 1822, there is no breakfast room and no set seating plan. No one is waiting for a table to become free. You can get up early or sleep in, have breakfast indoors or take the basket out onto the terrace with you.

Perhaps one person is already making coffee while the other is still lying in bed. Perhaps the dog is taken for a walk first. Or you sit at breakfast for so long that morning almost turns into afternoon.

Being looked after without having to adhere to someone else's schedule – that's precisely where we find the special quality of a holiday home with a regional breakfast.

A home for a few days

Our three holiday homes were built from Wood, straw and clay built. The wood comes from their own forests, straw protects the houses from heat and cold, and the clay walls ensure a pleasant indoor climate.

The natural materials are not just visible. You can feel them. In the scent of the wood, in the quiet warmth of the rooms and in the special tranquility that spreads through the house.

Each holiday home has a fully equipped kitchen. The breakfast basket therefore does not replace the freedom of self-catering, but complements it. Perhaps a piece of cheese will be left over for the hike. Perhaps the bread will be cut again on the terrace in the afternoon. And anyone who wants to prepare something themselves in the evening will find everything they need in the house.

This is how a home for a few days is created – with enough privacy and with hosts who are there when needed.

A day without a timetable

After breakfast, there is no mandatory programme at Ebner 1822. Instead, there are many options available.

A walk through the forest. A book by the natural pond. A quiet spot with a view over the upper Gurk Valley. A hike in the Nock Mountains or a trip to one of Carinthia's lakes. Or perhaps none of the above.

Some people want to cram in as much as possible during their holidays. Others are happy when they have nothing planned for the day. They pour themselves another coffee, leave their phone at home, and only decide later if they want to go out – or simply stay put.

Our small holiday village does not live from Constant animation. It lives off the landscape, off the silence and off the freedom to rediscover one's own rhythm.

A relaxed morning with the dog

Dogs are also welcome in two of our three holiday homes. For them, the day begins without lifts, hotel corridors, or long walks to the outside. The front door opens – and meadows, forests, and paths are already waiting for them.

As our grounds are not fenced and other animals also live on the farm, dogs must be kept on a lead outside the houses. The natural pond is reserved for our guests and is not intended as a dog swimming area. The Ronacher Bachl and the Gurk in the surrounding area are suitable for cooling down.

This way, the stay remains relaxed for the dogs, their humans, the other guests, and our animals on the farm alike.

Barbara cooks when the guests don't want to cook.

Owning your own holiday home also means being able to make your own decisions every evening. Sometimes a small treat on the terrace is enough. Sometimes you cook together. And sometimes you simply want to sit down at a laid table.

Then there's Barbara's Kitchen in the Village Inn by Ebner 1822. Here, regional dishes and carefully selected organic foods are served. Without a lot of fanfare, but with plenty of experience and a keen sense for good taste.

Barbara is happy to prepare meals for our house guests in the evening too, by arrangement. This way, the freedom of the holiday home is preserved – and yet no one has to cook for themselves every day.

A morning that belongs to you

At first glance, a breakfast basket is merely a service included in your stay. However, it actually gifts something far more valuable: a morning without appointments and without a set schedule.

You don't have to get ready to go for breakfast. You don't have to stick to a strict time, nor do you have to decide whether you'd prefer to sleep a bit longer or make it to the buffet.

You simply open the door, bring the basket in, and start the day in a way that does you good.
